I'm in Canada going to school right now and I'm very serious about moving to Italy and working there. I've been trying to find information on practising there but I've become quite unsuccessful in finding any information. thanks!

If you're truly keen on working in Italy you should be most concerned about getting a work permit. The process is tedious and bogged down by bureaucracy. Plus, you'll need a formal sponsor to even start the application process.

For more information, check out the Work Permit in Italy page.
