Well actually, first off, where in France are you planning to live? The nation is renowned for its system of public transportation and its big-time respect to bikers (the non-motorised kind), so if you're going to live in a big French city chances are you don't even need a car. Even long-distance travel is possible sans un voiture (without a car), thanks to low-cost airlines, the chunnel and a fantastic train system.
If you're still convinced you want to buy a car in France (AND, you have a residence permit), the best place to start doing research is L'Argus Auto.com. This is a site devoted to calculating the value for a used car. That way, whether you're purchasing from a dealership or a private owner - you won't get conned. If buying new, this isn't necessary - obviously.
