I'm not sure where you're from or what level of safety you're used to, but I think I can say with confidence that you will find Taiwan to be a very safe country. You can walk around at night by yourself without being hassled with the possible exception of (very, very few) dodgy areas. If you follow very basic safety precautions like being aware of your bag when you are in a crowded marketplace (so you aren't pickpocketed), you will be OK!
